I’ve had this recipe for years, and the reason I love it is because it’s quick and easy.
Half cup sugar ( I like to use raw or brown sugar)
Half cup butter
Half teaspoon bicarbonate soda (dissolve in a bit of water)
2 cups SR flour
2 small bananas mashed (mine were brown ones from the fridge)
Few drops of vanilla (I like to use many many drops)
Cream the butter and sugar
Add the eggs and beat
Then add the bananas and bicarb
Then fold in the flour
Bake in a loaf tin oven for approx 40mins or if you split the mixture into 2 tins approx 20-25 mins
Last night I was lazy and threw everything in the bowl and mixed it with a fork and to be honest the cake worked out better than ever !!
